Through achieving certification as a Yoga teacher in 2011 and studying culinary management in 2012, Cathrine found a passion for plant-based nutrition and realized a deep connection with self and the world around her.
Following her own intuitive path, Cathrine spent eight months living in remote parts of Nicaragua honing her culinary skills as a chef, teaching yoga and offering massage to retreat participants. Here she showed individuals how to prepare locally sourced, organic herbs, vegetables, fruit, coconut and essential oils, and incorporating these in a creative way for daily meal plans.
Cleansing and detox retreats were frequented by individuals suffering from a variety of ailments. Multiple Sclerosis, diabetes, hypertension, IBS, sexual dysfunction, hormonal imbalance and disordered eating were alleviated through experience of this holistic, plant-based approach combined with Yoga. Apart from her initial RYT 200 Sivananda Yoga certification, she has acquired over the years training and experience on Power Yoga, Kids yoga, Prenatal yoga, Yin yoga, Yoga Therapy and Personal Training.
When Cathrine is not teaching she is enjoying time with her two children, husband and dog either hiking mountain tops or enjoying the beach on Vancouver Island, Canada.
Miriam is a vegan Health & Lifestyle Coach, a registered 200hr Hatha Yoga Teacher trained in northern India, co-owner and General Manager of Apoyo Lodge, Nicaragua’s first 100% vegan boutique hotel and founder of Retreat with Miriam, which offers vegan retreats in stunning locations for those looking to make changes to their body and mind in stunning locations.
Having gone through a deep personal transformation herself in the last seven years, from high-stress corporate slave to wellness entrepreneur, from chronic illness and overweight issues to holistic health approaches and cruelty free lifestyle, Miriam dedicates her time and efforts to help others explore the different areas of their lives to see where balance is needed using her skills and experience in yoga, plant based nutrition and health coaching.
Born in Spain with a wanderlust soul and slightly dark sense of humor, Miriam has lived in six countries across 3 continents, before she settled in the stunning Laguna de Apoyo, Nicaragua where she currently lives with her husband, step-daughter and a bunch of rescued animals.
